When all you want after a hard day is a warm, home-cooked supper, my One-pot Creamy Pesto Gnocchi is the perfect dish. This dish combines simple freezer veggies with perfectly cooked potato gnocchi in a creamy pesto sauce with parmesan, spinach, garlic, and bacon for something truly unique. In less than 20 minutes, you can have this meal on your dinner table with little effort. The greatest thing is that You just need one pot, which translates into less cleaning and more time to savour each mouthful!
Creamy Pesto Gnocchi in a Single Pot

With soft gnocchi cooked in a sauce of cream, parmesan, garlic, pesto, vegetables, and crispy bacon, this one-pot creamy pesto gnocchi recipe has it all. The best part is that it only requires one pan, takes only 17 minutes to prepare, and the pasta cooks right in the sauce.

Components
- 1 tablespoon of olive oil
- 250 g (9 oz) of bacon, cut into little strips (about 3 bacon slices).
- minced two cloves of garlic
- 2 tbsp of basil pesto, either store-bought or made at home
- 300 mL (10 fl oz) of thick (heavy) cream
- 300 grams (2 cups) of frozen veggies (I used broccoli and peas).
- fresh potato gnocchi weighing 500 g (17 oz) (see note 1)
- 2 cups (90 g) of fresh baby spinach leaves, if desired
- 1 cup (100 g) of parmesan that has just been grated
- 1 tsp red pepper flakes (optional)
Guidelines
- In a large skillet, warm the olive oil over medium-high heat.
- The bacon should be added and cooked for two minutes.
- Add the garlic and cook for 30 seconds, stirring, until it becomes aromatic.
- Mix in the freezer veggies, thickened cream, and pesto. Cook for 3–4 minutes, or until the vegetables are soft and the sauce has thickened somewhat.
- Cook for two minutes after adding the potato gnocchi and spinach leaves.
- Mix the parmesan thoroughly after turning off the heat.
- If you’re using chilli flakes, top with them and serve.
