2 ½ cups (250g) of crushed graham crackers
½ cup (115g) of melted unsalted butter
¼ cup (50g) of granulated sugar
For the Cheesecake Mixture:
16 oz (450g) of softened cream cheese
1 cup (240ml) of heavy cream
¾ cup (90g) of powdered sugar
1 tsp of vanilla extract
1 tbsp of lemon juice
½ cup (120g) of sour cream
1 packet (7g) of unflavored gelatin (optional for stability)
For the Strawberry Layers: 2 ½ cups (400g) of sliced fresh strawberries
¼ cup (50g) of granulated sugar
1 tbsp of cornstarch
½ cup (120ml) of water
For Topping: 1 cup (240ml) of whipped cream
Whole strawberries, for decoration
Graham cracker crumbs, for sprinkles

Instructions

STEP 1: MAKE THE BASE

In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed.
Firmly press this mixture into the base and slightly up the sides of a 9inch springform pan.
Put the base in the fridge while you make the filling.

STEP 2: MAKE THE STRAWBERRY LAYER

In a saucepan over medium heat, mix the sliced strawberries, sugar, cornstarch, and water.
Keep stirring until the mixture becomes thick and the strawberries become soft (around 5–7 minutes).
Take it off the heat and allow it to cool completely.
